The delicious nutty flavours from the pistachios and tahini dressing, along with a delicate sweetness from the raisins and apple, provide this salad with an abundance of flavour and nutrients.
1/2 red Cabbage
2 large carrots
3 tbsp raisins
3 tbsp pistachio nuts
1 tbsp tahini
2 tbsp water
pinch of salt & pepper
Finely slice the red cabbage.
Grate the carrots.
Core and chop the apple into small chunks
Mix all together in a large bowl then sprinkle in the pistachios and raisins.
To make the dressing add the tahini, lime juice and water to a small bowl and mix thoroughly to a smooth drizzle consistency. This might take a minute or two so try not to be tempted by adding too much water (no one likes a really water dressing).
Drizzle the dressing over the coleslaw ingredients and mix through thoroughly.
