This easy mixed bean burger recipe is packed full of delicious flavour making an ideal go-to for a meatless meal. Scrummy and nutrient-dense.
1 aubergine, chopped
2 garlic cloves
1 red onion cut into 1/8 or chopped
1 tin mixed beans
1/2 lime, juiced
1 tbsp psyllium husk
4 tbsp ground almonds
1 tbsp smoked paprika
1 tbsp ground coriander
pinch salt & pepper
Preheat your oven to 180º and line a baking sheet with parchment paper.
Chop the aubergine and red pepper and peel the garlic clove. Place on the baking sheet and roast for 15 mins.
Add all the ingredients to a food processor and blend to desired consistency. I like mine with a few chunky pieces but I know some people might prefer theirs smooth.
Form into 4 patties. At this point, you can refrigerate for up to 24 hours or freeze.
Grill for 8-10 minutes or gently fry for 10 mins.
