150g Oats, ground
50g ground almonds
2 tsp baking powder
1 tsp cinnamon
2 large eggs
3 tsp vanilla extract
400ml Almond milk
1 tbsp maple syrup (optional)
1 tsp butter or coconut oil for the waffle machine
Blitz the oats in a food processor then add them to a large mixing bowl.
Add the ground almonds, baking powder and cinnamon to the bowl.
In a separate bowl, whisk the two eggs, with the almond milk, vanilla extract and maple syrup.
Pour the liquid ingredients into the dry ingredients and mix thoroughly.
Heat your waffle iron or machine and add the butter. Ensure its evenly coating the iron or machine to eliminate sticking.
Pour in 1.5 – 2 serving spoon sizes of the mixture to the skillet or machine depending on the size of your machine will depend on how much batter is required. Too much will cause it to over flow when the lid is sealed.
Allow to cook for 2-3 minutes (again dependant on your machine)
Carefully remove when golden brown.
Enjoy with either topping of your choice.
Topping options – Sliced banana, blueberries, maple syrup, or honey.
